Friday night, pizza night.

We usually do pizza night once a week, and it’s usually on Fridays and I’m usually excited for it. Just kidding, I am ALWAYS excited for it. Let’s be honest, I love pizza. Love, love, love pizza. When Adam and I got married, we received a pizza stone and it has been used so much that it’s not the prettiest thing to look at, but it makes for delicious homemade pizza.

My most favorite one to make is made with 1/3 of the Trader Joe’s whole wheat pizza crust (Adam uses regular) topped with sauteed onions and garlic, sweet apple chicken sausage and mozzarella cheese. After it bakes, I cover it in arugula and devour. The arugula topping was inspired by one of the first pizzas I had in Italy and I was shocked at how much I liked basically having a salad on top of my pizza, but the peppery bite is amazing. I also like to drizzle a little balsamic on it just to drive the salad-on-top-of-pizza theme home. It cuts the richness of the pizza itself and it’s so good.

We actually had pizza again on Sunday night, right after getting home from the mountains. Adam had a craving after I made him watch Pioneer Woman and so I thanked him for his sacrifice by making him a take on this four cheese pizza that she made. I didn’t feel like driving all the way to Trader Joe’s, so I used a pizza dough yeast mix and it actually worked! We have tried and failed a few times at homemade pizza crust. I don’t think we ever got the water warm enough, now that I think about it, but this time was a success. It was not whole wheat, but I decided to overlook that part. That was my delicious sacrifice.

We love Friday night pizza nights. It’s our way of celebrating the start of the weekend with carb comas and pizza bellies. Wide eyes, full stomach, can’t lose…or something like that.
